This is a lovely skillet fried pizza crust, and has been the recipe that consistently turns out best.
My apologies if this is not a very good photo. In fact, this is a slice that has been sitting in the refrigerator! I will get a better one next time I make this.
This recipe makes two small crusts, they are just a little larger than your normal personal pan pizza crust sizes.
Use your favorite GF flour mix, or if you don't have one, try mine! It's easy to make and you can find most of these ingredients at any health food store. Gluten Free Flour Mix Recipe.
1 cup gf flour mix
2/3 cup of milk
2 eggs, beaten
1 teaspoon salt
1 teaspoon baking powder
2 teaspoon italian spices
dash of garlic powder
Mix all together in a bowl, and whip gently, but don't over beat. The batter should be about the consistency of pancake batter.
Heat up a medium sized skillet and oil it well. Pour half of your batter into the skillet. After a few minutes you should start to see bubbles, and the batter will turn darker and look slightly cooked. Check the bottom by lifting an edge with a spatula. If it looks golden brown, flip it, and let it fry for a few more minutes. When it's golden brown on both sides, place it in a large pie dish or a pan, and top with sauce and whatever goodies you so desire!
Bake in the oven until cheese is melted.
These are great to make up several ahead of time and freeze them for later.
